300g dried spaghetti
1 tbsp olive oil
2 large shallots, diced
1 garlic clove, crushed
300ml white wine
450g prepared mixed seafood, such as mussels, clams, squid and prawns
a handful of freshly chopped parsley
ground black pepper
Cook the spaghetti in boiling water according to the pack.
Meanwhile heat the oil in a large pan and sauté the onion and garlic gently for 5 minutes. Add the wine and allow to simmer, to reduce for a few minutes. Add the seafood and cook until the mussels and clams open and the fish is cooked through. Stir in the parsley and season.
Drain the pasta, stir in the seafood mixture and then divide between 4 warmed pasta plates or bowls.
HEALTH CHECK. Squid is an excellent source of selenium and B12. Selenium is a powerful antioxidant and B12 supports normal functioning of the brain and nervous tissue.
